Course Appetizer, Side Dish
- baby bella mushrooms
- 6 oz cream cheese
- 2 slices bacon
- 1 red Fresno chili pepper
- ½ red bell pepper
- 3 green onions
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp garlic powder
- ¼ cup parmesan
Start by preheating the oven to 425F and grease or line a baking tray and square pan with tinfoil. Place the slices of bacon on the baking tray and cook for 15-18 minutes or until desired level of crispiness.
Cut up the bell pepper, green onions, and bacon into small pieces. Cut the chile pepper up really finely.
In a small bowl, add the cream cheese, bacon, peppers, onions and seasonings and mix until combined.
Remove the stems from the baby bella mushrooms and add a spoonful of the cream cheese mixture where the stems were. Top with parmesan and place in square pan and repeat until desired number of mushrooms. Store leftover cream cheese mixture in the fridge and save for another night. Try stuffing jalapenos or mini bell peppers!
Bake for 15 minutes or until the tops are a nice golden brown. These are best served immediately. Enjoy!
